Yummy Saucy Meatballs

This is one of Gerald's favorite meals!

1 egg, beaten
5 oz. evaporated milk
1 c. quick oats
1/2 c. chopped onion
1 tsp. salt
1 tsp. chili powder
1/4 tsp. pepper
1 or 1 1/2 lbs. ground beef
1 c. ketchup
3/4 c. brown sugar
1/4 tsp. garlic powder
rice on the side

Mix the egg, evaporated milk, quick oats, onion, salt, chili powder, pepper, and beef together in a mixing bowl. Form into 1-inch balls. Bake in a 9x13 ungreased pan, uncovered, for about 20 minutes. Meanwhile, bring the ketchup, brown sugar and garlic powder to a boil. Reduce heat and simmer for 2 minutes. Pour over meatballs after they have cooked for 20 minutes, and cook again in the oven for 12 minutes more. Serve over rice. Delicious!

This is a great freezer meal!
